(Enough time to eat and get to the car, but not enough time to get HOME!) This was my experience, too. For 20+ years. And impossible, really, to explain to an outsider. Not even my doctor could really understand it. Not even my husband who had to tolerate the inconvenience for many of those 20 years... But I digress. My questions are these - - Did many of you get that gluten reaction while still eating the dinner? Did you ever find yourself thinking " Oh no. I've just had one nibble too many? I'm doomed. " - Do you think the instant (20 minutes) versus delayed (hours and more) reaction time might vary based upon the AMOUNT of gluten? Do you react instantly with just a stray crumb? Or are the stray crumbs and other hidden glutens the ones that cause the delayed ( & therefore MYSTERIOUS and STILL FRUSTRATING) gluten reactions? I ask because I find that I never have to suffer that " Oh no, I've just had one nibble too many " feeling any more. (HOOOORAY!!!) BUT, I still find myself completely baffled by the delayed reactions. How in the world does one track down the cause/s of the delayed reactions??? I have been GF for almost 6 months, and this is completely stumping me. Yesterday was one such day. My dinner preceded an attack. But I know the dinner was GF. I cooked it. Mind you, I live and cook in a mixed household. I'm the only GF so I don't have a GF kitchen. But I think I'm careful. " THINK " is the operative word in that last sentence.
