Look online. There are recipes for one that use cake mix to make a mug full of cake which is perfect for one. You can also make cupcakes and freeze them before icing. Patti

You probably already know this, but there are lots of sources of gf baking mixes that are virtually indistinguishable from the usual suspects. Even Betty Crocker has gf cake mixes on regular grocery store shelves. I'm way to lazy to bake ('sides I live alone and really don't want to eat a whole cake) and there are more and more places in my region that create everything from gf cheesy breadsticks to oooey gooey desserts. Funny thing, once I got past the initial thrill, they're not as alluring... There's also a website group that lists national restaurant chains with gf specialities, etc. PF Chang has excellent, excellent gf chinese... Sandarah (in the Pacific Northwest - USA)

Small world. I hang out in Puyallup and Tacoma with old high school besties every month or two! Wish I had some IEers close by to start a breakfast club.

Sandarah, you sound like someone after my own heart ;-) Just wanted to clarify that my (self desired) 'sabbatical' from this group was after about 3+ years of active participation. I felt that I had slipped into (outward) 'caretaker' mode and needed to turn those energies onto and for my own benefit which I had placed second to the group too often. My own 'dream' for in life IE participation would be a get together for a workshop on practices like mindful eating. Would be challenging to set up, but oh the possibilities of advancement along a most difficult aspect habit changing. I'm just south of the Oregon border (northernmost California) and would be quite interested to see how many here would be interested and/or could 'hub' in a place like Portland OR? Katcha
