My husband and I

are going to a party with friends. They set up a casino in their house every

year with poker, a craps table and various other games. Everyone brings food to

share so I am making a yummy chicken enchilada dip. Last night I had a dinner

party for 8 so I am exhausted today. I am going to make the dip then take a few

naps before tonight…… I will need to

stay awake to wait up for my teenager and young adult who will both be out. I

think I am ready to go back to work and get some rest…………… Happy New Year,

My

plans...

I've already put on the pork roast.. to which I'll add sauerkraut, then

kielbasa, then the hot dogs.. later this evening.

I've loaded the dishwasher for it's first run today.. and if the kitchen

isn't clean by midnight I'm gonna be one unhappy camper.. cause we don't

need the added superstition of "how it is at midnight, it will be the

rest of the year" to our messy kitchen.. it's usually that way anyway..

I'd like to see counter tops this coming year.. ROFL... (chair comes in

handy for this stuff)...

I've invited my youngest son to come over and spend the evening with

us.. Even offered to buy him his beer or whatever he wants to drink..

with the provision.. the second he has a drink, he turns over his truck

keys for the night.. I'll party with him till I make myself sick, if

need be... And we'll arrange the 3 computers here so that we can all

play Runescape if he wants..

I know offering to buy him the booze is awful.. BUT.. I'd rather have

him here, safe & warm than out with friends and drinking and driving..

I'll do anything it takes.. Especially with the 3 inches of solid rain

dumped on the roads this morning!.. and more coming...

And then we'll eat the traditional. . pork & sauerkraut .. the other

goodies are an added bonus..

But I'd be willing to bet that I'll be sleeping before 1.. LOL

I have a dip recipe I can share... Ok, with this I make the tortilla chips. I buy corn tortillas, slice them into 8th's, and fry them in a little olive or peanut oil in a skillet...to go with: Taco dip!!! Take 1 lb ground beef, brown it, and add I pkg taco mix. Basically, make 1 packet taco mix, with the beef, as per their instructions. (Boy I went the long way around for that one). When the taco mix is done (and you better have it in a good-sized skillet or pot) add 1 jar velveeta, I jar salsa (hot/reg/med depending on the tastes of your guests), (you can also add some chopped 'maters) and a package of shredded cheddar cheese. Stir till it is all melted and gooey. And dip! I have had guests almost fighting over this. They will stand by the pot and fend others off!!! My husband and I are going to a party with friends.

They set up a casino in their house every year with poker, a craps table and

various other games. Everyone brings food to share so I am making a yummy

chicken enchilada dip. Last night I had a dinner party for 8 so I am exhausted

today. I am going to make the dip then take a few naps before tonight…… I will need to stay awake to wait up for my teenager

and young adult who will both be out. I think I am ready to go back to work and

get some rest…………… Happy New Year,

My

plans...

I've already put on the pork roast.. to which I'll add sauerkraut, then

kielbasa, then the hot dogs.. later this evening.

I've loaded the dishwasher for it's first run today.. and if the kitchen

isn't clean by midnight I'm gonna be one unhappy camper.. cause we don't

need the added superstition of "how it is at midnight, it will be the

rest of the year" to our messy kitchen.. it's usually that way anyway..

I'd like to see counter tops this coming year.. ROFL... (chair comes in

handy for this stuff)...

I've invited my youngest son to come over and spend the evening with

us.. Even offered to buy him his beer or whatever he wants to drink..

with the provision.. the second he has a drink, he turns over his truck

keys for the night.. I'll party with him till I make myself sick, if

need be... And we'll arrange the 3 computers here so that we can all

play Runescape if he wants..

I know offering to buy him the booze is awful.. BUT.. I'd rather have

him here, safe & warm than out with friends and drinking and driving..

I'll do anything it takes.. Especially with the 3 inches of solid rain

dumped on the roads this morning!.. and more coming...

And then we'll eat the traditional. . pork & sauerkraut .. the other

goodies are an added bonus..

But I'd be willing to bet that I'll be sleeping before 1.. LOL

Sharon, The dip is so

good. My husband threw me a graduation party a couple of years ago when I

finally finished college and the caterer made it. Afterwards I asked her for

the recipe and she wouldn’t share. So I googled and played with a few of the

recipes I found and recreated the dip. 1 pound grilled

chicken breast, shredded 1 --8 ounce

block of cream cheese, softened 1 cup mayo 1 can diced

green chiles (4 ounce) 8 ounces of

shredded Mexican cheese 1 jalapeno

pepper, finely diced Combine it all

and bake at 350 degrees for 30 minutes. I used light

cream cheese, mayo and shredded cheese this time and it still turned out yummy. Our casino night

was fun. My husband ended up bringing home 125 dollars…. A great way to start the

New Year. Hope you year is
