I know that when I worked at Rax.. when we made their baked potatoes.. They were always super hot.. and we were taught to well.. can't remember the word they used.. but the easiest way to handle a baked potato.. specially if they are wrapped in foil while baking.. We had a tong like tool.. cept it had teeth on the one side.. I know you've seen them used on salad bars and such for picking some stuff up.. Once the tater comes out of the foil.. cut down the middle of the tater, length wise.. then use your fingers like you were going to massage both sides of the tater at the same time.. press in and up with your fingers.. immediately does what you'd do to smash up your baked taker with a fork.. in a second.. (fluff.. that's what they called it.. fluffing the baked potato).. then you add all the goodies, butter, sour cream, chives.. or whatever.. It was efficient way to do it in the fast-food restaurant way.. because even making the most complicated topped tater was to take no more than 20 seconds from beginning to ending with popping the lid on top of the tater boat thing..
