Guest guest
Hey Sherrie! Journal looks great!! Do you make or buy the southwestern chicken salad? It sounds yummy! What king of lemonade did you have? It sond very refreshing! Maybe there is another brand that is less points, or maybe make some at home with fresh lemons and raspberries?!? I really need to get some of the flax seed, I think I will stop at our health food store today after swim lessons and see if they have it. I also need some more bulgar. I can't go to the Central Market (the huge store in Plano) for now because they have mosquitos the the Nile virus and I won't take a chance on any of us getting bit. Maureen Sherrie K's journal 7/17/02 - XO 1 cup cherries (1) Lowfat blueberry yogurt with flax seed (2) 2 slices light wheat toast (1) 1 T RF peanut butter (2) Southwestern chicken salad - salad (5) 3 cups lettuce, southwestern chicken salad, 1 oz 2% cheddar cheese, salsa Chex mix (2) Baked potato with 2 T light french onion dip (5) 2 cups steamed broccoli & cauliflower (.5) 1 cup fresh corn on the cob (2) 24 ounces raspberry lemonade (6) OUCH! hot day and it tasted good 26.5 PTs for the day 120 ounces water 1/2 hour walking

Guest guest
Maureen - I made the Southwestern Chicken Salad. It is something I used to serve in mini pitas when I was a caterer. The recipe is not real exact as I make a small amount at a time but here goes. Southwestern Chicken Salad 1 grilled chicken breast Diced green pepper, celery, green onions and tomato. Dressing is 1/4 cup FF mayo, 1/4 cup light sour cream, splash of orange juice, 1/4 t cumin and chili powder, 1/8 t white pepper and salt to taste. Mix the chicken, veggies and dressing. Sometimes I add a little 2% grated cheddar cheese and a few toasted pecans when I have them. This is great served on a pita or on top of a bed of lettuce with salsa. I hope this makes sense. The raspberry lemonade I had was Minute Maid. It is not something I normally buy but it was one of the freebies at the grocery store this week. I am a sucker for freebies. When you buy $15 of groceries you get something free. Last week it was 1/2 gallon lemonade, a box of Cherrios and a pound of grapes. Next time I will make it from scratch as I'm sure it would be more point friendly. Sherrie K

Guest guest
Maureen - You are welcome! The chicken salad is great. I wish our stores had that 10% back on groceries. Guest guest
Sherrie, You had to spend a certain amount before you earned the 10%, but then you could use it for everything. So of course, when I got the coupon for the 10% off, I stocked up on everything, especially those buy one get one free items. All that amount applied to the next coupon too, so it was like a double savings. Maureen Re: Sherrie K's journal 7/17/02 - XO YUMMMM!!! Thanks for the chicken recipie!
