Then i rinse off the bitter liquid and salt, and marinate it in balsalmic vinegar with seasonings and however much olive oil my diet can take. (when i was dieting it was basically all vinegar, heh heh). Then I bake it in a high heat, take it out and assemble an eggplant parmesan... basically layered eggplant, spinach (if you want), lowfat pasta sauce and some lowfat mozzarella cheese. If you want to maximize flavor and minimize calories, you can add a little asiago or other strongly flavored cheese to a small amount of mozzarella cheese. Alternatively you can saute it in sesame oil, adding a sauce of miso, soy sauce, sweetener and vinegar. > > I have an eggplant I need to eat!! Got my interest so I checked it out....I've never eaten eggplant that I can recall but I think my mom had once said Dad liked it...maybe she doesn't and just never made it for all of us. Has the consistency of...hummm ......mushroom maybe? Cooked eggplant has texture like mushroom, soft depends on how long you cook it. Cooked alot it's quite squishy. But the flavor...oh...you'll just have to try it. Maybe there's a food bar somewhere you can get Babba ganoush or baked eggplant or an eggplant casserole with lots of cheese. I love it any way you can cook it.
