I know my health started going downhill when I switched from my typical breakfast to coffee and apricot scones EVERY morning for my last year of grad school. I still miss them!! My dad is Irish but Dr. Mercola's office said gluten isn't good for anyone regardless of your heritage. I don't know the specifics about blood testing for gluten sensitivity. Apparently some tests are more accurate than others. My blood shows gluten sensitivity but I'm not sure which test I had. When I had a biopsy on my stomach it was negative. I wouldn't recommend the biopsy because I've read it's not that reliable, even though my GI said it was the " gold standard " . It's not worth the hassle/risk of anesthesia and I don't think anyone who's gluten sensitive needs it. Better just to avoid the offender. A lot of people on the gluten forum used a stool sample test from https://www.enterolab.com/Home.htm I haven't done that but I know former saline member P did. I'm just assuming I am gluten sensitive based on my blood test and how I feel when I eat gluten. It's easier to avoid it than to feel sick! I'm dairy intolerant like you too, although I do drink kefir from time to time without problem. Your flan probably had some dairy along w/ gluten...bad combo! No wonder you felt bad the next day. As far as what to eat, it's kind of hard at first to make the change, but once you do, you start craving the healthy foods. I'm to the point I actually prefer veggies and meat over anything else and very rarely have cravings for bad foods. Good luck!
