I had the same experience as you… all

of my local Ethiopian restaurants serve on a large flat bread. : /

The ethiopian restaurant Jaras (spelling?) In Portland,

Oregon was

very

difficult- I didn't eat anything because it all

came in/ on bread (you

eat with your hands), and it was largely based on

meat. (vegetarian

issue, not celiac.)

However, there was a vegetarian ethiopian

restaurant in Boulder,

Colorado that looked very

promising- just weirdly worked out that i

never ended up eating there.

Not necessarily off limits. The bread is called Injera and the authentic

way (slow) to make it is to ferment teff flour (which has no gluten, IIRC)

and make a batter.

The " quick way " uses wheat flour.
