Cherie,

I stay away from all breads for now........I am an Italian and I love Breads but I want to get better so

I dont chance anything for that yeast to feed off of. Plus when you dont feel good its hard to make your

own breads and fix your meals and take your vitamins. And then all the fast and detoxing on top of it

was too much for me to handle. So I just stayed away from it.

I have been on Ezekiel Sesame bread and I am assuming it has gluten in it. I had bought some gluten-free, lactose-free tapioca bread and it is very good however it has 1 gm of sugar in each slice. I suppose I cannot have that right now on the candida diet...right? I need some bread!! Please help on where I can buy some....even if it's on line. Cherie,Making the transition to gluten free isn't easy . . . but many others have done it, and you can too it - if means you'll have your life back.If you'll do a websearch for Celiac Disease, you'll find a host of websites devoted to understanding it, lists of brand name foods that are safe, plenty of recipes and people who want to provide support. . . You'll find my friend on the DFW Celiac website. . . Her husband is the Webmaster. Her name is Sandy. You may want to invest in a flour mill so you can make your own flour from safe grains . . . My friend eats bread from rice flour . . . She said that if you toast it, it tastes pretty good. . . She's a operating room

nurse . . . She tells me that 20% of the population has Celiac Disease, but most of them just live with the misery because they are undiagnosed. She was talking to a surgeon who told her that 20% of the patients who have gall bladder surgery don't get better . . . She suggested to the surgeon that that number is the same as the population of those with Celiac Disease. With Celiac Disease, little hair-like growths in the intestines get scared. Then they lay down. And, instead of absorbing nutrients, the food just passes through. You can eat like a horse and still be malnourished. If you do have Celiac disease, it's very, very important that you learn to accept it and live with it. . . Occasional instances of denial can wind up in the emergency room. Accidental exposure to gluten can do the same thing. ly, if I had to chose between treating for Candida or Celiac - assuming I had both problems, I'd give Celiac disease

priority right now.Hugs,Rogene

Hi Cherie,

Yes, eliminating gluten is a really good idea. Gluten is hard on the

adrenals and because it's difficult to digest, it feeds the yeast.

I've tried all kinds of gluten-free products. Most of them are not

appetizing in the least, are expensive and are not healthy. As you

probably know, a GFCF diet is of benefit to many autistic kids. What

I've found and read though, is that many of the kids/families do

worse after starting the diet. The reason being is that they

suddenly think it's ok to eat all these boxed cereals, breads, snacks

if it's GF.

Yes, you want to be GF, but you also want to stay away from the boxed

GF products and breads. The reason is they are high in rice starch,

tapioca starch, corn starch, etc. All the starches feed the yeast

and clostridia common in autistic kids. Plus they often have cane

sugar in them. Not good for them or us.

I know it's hard because it's like, what else is left then!!?? Plus

my youngest is like your daughter in that he's extremely picky and

only likes about 4 things (and they all have gluten or milk in

them). Now though we use lettuce as bread for sandwiches and

burgers. We get big crisp romaine lettuce leaves. We also make

muffins and pancakes out of nut flours because it has more protein

and won't feed the yeast and clostridia. I know your daughter's

pretty picky too but in time she'll conform if it's not in the

house. Getting through those first weeks isn't easy but eventually

it passes.

I don't eat bread at all anymore and only rarely miss it. I will

have a Lundberg Brown Rice cake on occasion w/ cashew butter. A good

website talking about the Specific Carbohydrate Diet and the Caveman

Diet for autistic kids as well as those of us who have chronic

illness is here:

http://www.stankurtz.com/biomedical/diet-autism-adhd-chronic-

illness.html

It's not easy but years from now you'll be glad you did it! Also,

I've talked w/ several families who are able to bring gluten back in

on occasion once the gut is healed...it takes a couple years though.

Love, PH

Cherie,

The absolute best gluten free bread I have ever eaten is the Millet

and Flax bread made by Sami's bakery in Florida. It looks, feels and

tastes just like any other sandwich bread but I know people with

celiac disease that successfully tolerate this bread. My mother

brought me out some from Illinois...her celiac friend gets it from a

Wisconsin bakery.

You can order it online, but the shipping price is what stops me.

For me out west, it is more than the bread! I decided I can go

without bread!

But if I could get this bread regularly, cheaply, this would be my

one and only....it's that good.

Hi PH,

Thanks for the info! The website wouldn't come up though. Can you

send it again?

Let me ask you, what to you eat for breadfast? That's when I have my

toast-time! I like to have almond butter sandwiches too. I guess I

would have to make my own bread.....yipes....me make bread! I think

my mom has a bread maker but not sure if it would work for gluten-

free, yeast-free breads.

What websites have you used to get started on all this?

Thanks my dear!

that question answered on the net. I have a lot to learn about this.

Cherie,Breakfast is the toughest!! For a long time (a few months before explant and about 5 months after) I ate meat and veggies for breakfast because my doc wanted me to eliminate eggs, dairy and gluten. I would put freeze individual bags of things like chicken, red onion, green beans. Then in the morning pop it in the oven w/ coconut oil. Now I can do eggs and am experimenting w/ adding kefir and oats. So, I usually have:

omelet w/ shredded zucchini and basil

omelet w/ red pepper and gluten-free turkey sausage (it does have a few grams of sugar though)

plain kefir smoothies w/ fruit

raw McCann's oatmeal w/ shredded coconut, fruit and pecans or brazil nuts. Most people say McCann's doesn't have gluten, but a few sites say they might. I eat it on occasion. It is sooooo hard to be totally strict!

I've tried buckwheat, amaranth and millet but just don't care of the texture of cooked cereal. Some people do though and you can add almond milk, cinnamon, etc.

We have a cookbook called Eat Well Feel Well that has delicious breakfast ideas for pancakes and muffins that are made w/ nut flour. It takes a couple minutes more but it's healthier. They do call for a little honey so I reserve these for a weekend treat. If your mom likes to cook, maybe she could help you out and you could freeze some of it and then pop it in the toaster and add a nut butter. They have a recipe for cashew bread but I haven't tried it...I'm not much of a cook but getting there.

Breaking the Viscious Cyle is another cookbook we have. Both are here:

http://www.amazon.com/s/ref=nb_ss_gw/105-9414655-2328447?url=search-alias%3Daps & field-keywords=eat+well+feel+well

Other sites that many of the families I worked w/ used:

http://pecanbread.com/

http://www.lucyskitchenshop.com/

Another great book that is a testament to the success of GFCF diet is

http://www.amazon.com/Unraveling-Mystery-Pervasive-Developmental-Disorder/dp/0684831643/ref=si3_rdr_bb_product

It also has recipes in it and the story is so inspiring!

Good luck, Cherie. I know it's all so overwhelming but if you just take baby steps it's a little easier. Like we're just now after all these months settled into a pattern of no gluten. Took a while to get there but I really believe it's going to pay off. Love, PH

Hi PH,

Thank you so much for sharing all this with me! Your a huge help! I

have been able to have eggs (I haven't had on in a while) but no

dairy. At this point, I do not think I have a dairy problem, haven't

had any in two months and not feeling better at all. I am going to

give this all try starting tomorrrow and I'll let you know how I do.

Thanks girlfriend!

Hi Cherie,

Honestly I'm not sure. I know the Body Ecology Diet for candida says

they are fine to eat as long as they are baked. Other candida diet

sites say stay away from them.

I never thought corn had gluten in it until today when I was at the

grocery store a meatloaf mix I looked at had " corn gluten " . I stay

away from corn now as much as I can because Mercola said corn has

more mycotoxins than any other food and that most people are allergic

to it. That was hard to hear because I was eating corn chips as my

big treat.

So now, I occasionally have Lundberg Rice Chips Sea Salt BUT they

have rice flour, corn flour and natural caramel color. I know it

goes against what I'm supposed to do but I'll have some when everyone

else around me are eating appetizers that I can't eat. They're

really good with hummus.

http://www.vitacost.com/Lundberg-Rice-Chips-Sea-Salt

Sometimes I feel I need to get stricter in order to get better...as

in just meat, veggies and a little fruit. Other times though I think

about Patty who splurged from time to time and recovered and that's

how I'd rather be. Just do what you feel is best for you. Love, PH
