What I find awesome about IE is finding out how unlimited my choices really are.

Diets are all about limits and that thinking puts me into a 'negative' (can't

have) starting point. Its so amazing to find that I can find NEW things to eat

and enjoy.

I'm currently playing with more gluten free eating - due to my body telling me

that perhaps wheat isn't 'welcome' at this time. Reading about what I could eat

instead of wheat based foods, I came across amaranth which is a seed more than

grain, and has more protein % than grains. I bought a small package of the whole

grain so I could taste it cooked and grind it into flour for recipes. I had been

enjoying a cracked wheat cooked cereal so thought - why not give the amaranth a

try that-a-way. Simply simmered for a few minutes, cooking with come added dried

cranberries and adding chopped almonds made a good tasting hot cereal for me.

The texture is more chewy due to the seeds retaining their shape, and drier than

most cooked cereals, which is a big plus for me (oatmeal is too 'slick' for me).

If it hadn't been for experiencing the broadening effect of IE, I might never

have been encouraged to give such an 'alternative' a try. And if I had been

'instructed' (as in TOLD) to do such and such, my diet rebel would have come out

big time.
