I was lead to beleive the starch would open up the cells in the body to accept the insullin better. " The short answer is no. For a type 2 diabetic the problem is more often the opposite,ie. the cells not beingsensitive to insulin because of too much glucose for extended time periods. Brown rice is better only in the sense that because it contains more fiber it does not have the same amounts of carbs. As I recall, it is about 1/3 less carbs. Some people substitute cauliflower that has been broken up and minced into small pieces.
