Saves on fat if you have a weight problem, i also have a muffin recipes and schones done the same way if anyone wants them. Mastercook if fantastic, does your calorie count too. * Exported from MasterCook * Cranberry Yogurt Bread Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Bread-Quick Diabetic Fruit-Cranberries Yogurt Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups all-purpose flour 1 1/4 cups Splenda Granular 2 tsp baking powder 1 tsp baking soda 1/4 tsp salt 1/4 cup orange juice -- or milk 1 orange zest 1 tbsp buttermilk 2 tbsp peanut oil 1 tsp vanilla extract 8 oz nonfat yogurt -- plain 2 lg eggs 1 1/4 cups cranberries -- cut in 1/2 - Pam- Combine 1st 5 ingredients in bowl making well in center. Beat egg whites until soft peaks form. In measuring cup mix OJ, oil, vanilla, yogurt, milk together and pour into flour, stirring just until moist. Add egg whites then blueberries. Coat bread pan with Pam and feill. Sprinkle with sugar or use strusel mix on top. Bake at 350° 45 min. Remove and let cool. Substitute 1/2 c whole grain flour. Add 1/2 tsp cinnamon, nutmeg or mace.
