I think it is something like a calorie represents the amount of energy

needed to raise the temperature of one gram of water one degreeC?

Every gram of food you consume is converted by your liver into glucose.

Glucose is the simplest organic sugar there is, and it is the only sugar

utilized by each cell in your body for energy. Pure glucose is tasteless or

at least it was when I took organic chemistrry. Each food source,

carbohydrate, protein and fat produces energy in the form of calories. Each

food converts a single gram into caloric energy as noted below.

carbohydrates is converted at the rate of 100% into glucose at the

conversion factor of 4 calories per gram.

protein is converted into calories at the rate of 50-60% at the factor of 4

calories per gram.

fat is converted into calories at the rate of 10% to yield 9 calories per

gram.

All excess glucose calories not used by the body is converted to fat with

the help of insulin, the storage hormone.

There are several metabolism pathways, and I do not know their names, but

the MRT (mediators release test) identifies several of them. This test is

supposed to identify whether or not you have a food allergy or food

sensitivity like lactose or gluten. Maybe a dietician can comment on this

message or correct any mistakes I have made here.
