All excess glucose calories not used by the body is converted to fat with the help of insulin, the storage hormone. There are several metabolism pathways, and I do not know their names, but the MRT (mediators release test) identifies several of them. This test is supposed to identify whether or not you have a food allergy or food sensitivity like lactose or gluten.
