Hello all!

I'm happily working to intuitively eat here...one step at a time.

The last few weeks have been great. I've been making muffins for my

morning breakfasts...make a set of 12 and put 2 in a sandwich bag for

each day's breakfast. That may sound like a lot, but these are the

small home-baked muffins, not the coffee shop ones. :) I'm saving

money and having a breakfast I enjoy. Many mornings I'll have a

glass of soymilk first and take some vitamins...I'm taking 5_HTP and

DHA supplements for the winter blahs.

Tonight I decided to prep my lunch overnight, and I have a seitan pot

roast (vegetarian) cooking in the crockpot. It'll be ready when I

wake up, and I'll be able to package it up for the next 4 days'

lunches. I'm getting to the point that, when I cook well, that I

look forward to my homemade meals so much more than anything I could

get out. These vegan pot roast meals will be scrumptious. I

homemade a broth and added extra shallot pepper seasoning, and have

carrots, celery, and potato cooking in with the roast. Amazing! :)

It's also a recipe I can use often when life is busy and I don't have

time to grocery shop weekly.

Anyway, just talking here. But I'm sharing because I'm developing a

new relationship with food. I'm not weighing myself in 2011. And,

I'm eating what I want. I realized that I'm about 90% vegan, and

that'll do just fine. I don't have to be 100%. There's no

competition out there. My ethics will get me where my eating wants

to go when the intuitive eating keeps in play. Slowly but surely,

that is!

This is a great recipe...another meal I've made recently: a garlic

and greens soup. The video is from a vegetarian author's site, and

just be aware of that. I'm not trying to advertise the

vegetarianism, but to share a good easy soup recipe. If you're

trying to eat healthy, this is a great way to do so!
