Sugar, I have a feeling this recipe is quite old. Gone are the days where we

gave no thought to eating chicken skin. I bet your recipe would work just fine,

minus the skin!

Ingredients

· 4 chicken, breast, boneless, with skins

· 4 sprig(s) tarragon, fresh

· 1 teaspoon salt

· 2 teaspoon pepper, black ground

· 1 tablespoon oil, olive

·

Preparation

1. Preheat the oven to 375 degrees F. Gently lift the skin of each chicken

breast and place a sprig of tarragon underneath. Season each chicken breast with

salt and pepper.

2. Heat the olive oil in a pan over medium heat. Add the chicken breasts and

cook each side until it is golden brown.

3. Remove the chicken breasts to a baking sheet. Place the breasts in the oven

and cook for about 20 minutes, or until the chicken has reached an internal

temperature of 165 degrees F. Remove the chicken from the oven and allow it to

rest for 5 minutes before serving.

yes, totally agree, I always remove the skin, but other than this, I think it

would be a good one as well

I ma sorry, I know what we have, but I always have loved the chicken skin.

I know people who pull it off and discard it, but I have worked very hard to

make it taste good. I'll have it less of course but I don't plan on wasting

it if my chicken happens to come with it. There are some places where I

draw the line.

Yeah, and I will confess I'll eat some skin, at least a little of it, when we

get KFC chicken. Which is about 2 times a year!
