Guest guest Posted April 6, 2012 Report Share Posted April 6, 2012 one cup of cottage cheese, maybe 5 strawberries cut up, some walnuts and a few packages of splinda. really a fine dish to have for lunch when you are like me and have no more quick acting insulin in your system. this never causes my readings between lunch and dinner to rise much at all. actually cottage cheese is very good for us who are keeping the sugar low and trying to drop pounds. I'm not much of a cheese person, but do like cottage cheese and cream cheese. also like to grill some onions in a bit of olive oil before I pour in my eggs. hard to beat a grilled onion for flavor to any food. now lets look at spinach in a can. I love spinach in a can, but pour it over in to a drainer of some kind and take out all the water they pack it in. then wash the salt out of it after the water is gone. now you got a little ball of sea weed looking thing the size of a gulf ball. you can mix it up with just about anything else you dig. I like to mix it up with sardines and eggs. mix it with a touch of cream cheese and eat it on a sliced cucumber or bell pepper. now here is a wonderful idea for a bell pepper. cut it in maybe 4 pieces and spread some home made chicken or turkey salad on it. none of that nasty chicken salad you buy in the store, but your own that you made from a chicken you had to cook your self. this is some mighty fine low carb eating here! can do the same thing with those giant mushrooms you can buy. fill up the bowl size hole in the middle with chicken salad and turkey salad. also good with scrambled eggs with some cream cheese mixed up in them. cottage cheese is good as well in them. all kinds of low carb things you can mix up and put in these giant mushrooms. you can even use 2 of them for the bun on each side of a burger. grill a hamburger patty and spread some real butter and spices on these giant mushrooms and grill them as your buns. they are all most as large around as a bun. some times I use romaine leafs for my bread instead on a burger. so many grate veggies out there to cook up and made to taste good by mixing them together with spices and a touch of real butter or cream cheese. when I get the wishing for a potatoes, I get the little one's that they call a new potatoes. a baby tadder. cut up a little of 5 different fast cooking veggies and make your own stir frie in olive oil. we who are watching the sugar and the weight have to get down right creative if we are to stay on course and not trip up. don't be afraid to try different mixtures of veggies together. this is how you figure out different things to eat that you like. now I haven't yet figured out how to make gravy and biscuits that are good for me. still working on this one. seems like I did hear of pancakes made with eggs and pork rimes. now I'm not sure if this is good or not. you can't just go by the way it is made. I will give it a try some day and let you know. if you miss mash potatoes, then try mashed up cauliflower or turn ups. always use real butter and not the fake stuff that isn't butter at all and bad for you to eat. use butter buds if you wish. a Indian friend of mine said he had trouble with his sugar staying under 300 most of the time. will it is very simple, he eats frie bread every day with all of his meals. can't get him to understand this is the main problem in his diet. I use to make my self and my Momma breakfast burritos and freeze them to eat when ever. well instead of using the flour tortilla, now I use a large letis for the wrap, use chicken instead of bacon, go light on the hash browns and use cream cheese or cottage cheese and it is still good and not going to destroy my sugar later. now here is the good news at the pig's house. picked me up a half gallon of 2% milk 3 days ago for this long weekend. got 3 or 4 days to drink it for breakfast and haven't opened it yet after 3 days! probably the first time in my life I have purchased milk in a container less then a gallon jug. jump up and down for the pig! turn back flips and laugh and giggle! pat my back and slap your face! there is hope for me yet!
