Guest guest Posted August 10, 2010 Report Share Posted August 10, 2010 The past few days I've been making foods that I love...I'm testing recipes for a crockpot cookbook...so I make stuff, eat stuff, make other stuff, etc. And take a vitamin at night because I'm not eating a ton of veggies. But that's okay! I'm re-examining tastes and loving every minute of it. I decided to become vegan in eating, as I've wanted to for years, and it has nothing to do with the addictive nature of foods...I'm setting that boundary for myself and know that if I eat just one bite I end up losing some resolve. It's for my ethics!!! Since I've done that, now I'm loving and enjoying all the vegan foods I've made lately. I made a vegan mac -n- cheese with unsweetened coconut milk (not the cans, but the beverage that doesn't taste coconutty but is rich) and rice cheeze. I made chocolate oatmeal, as I mentioned, blueberry cornbread, a delicious dahl, etc. For " breakfast " today I ate up some leftover mac n cheeze, then for " lunch " had some soy yogurt with muesli and extra raisins. Dinner will probably be dahl and leftover Laotian food that I had last friday. What's my point? I'm learning to really enjoy food one step at a time, and following my hunger cues. It's okay! I can eat whatever I want whenever...and when I'm gentle with myself I have an eye on nutrition without being insane about it. That's such a relief!!! I love discovering the joys of the crockpot. And the smaller crockpot is great for breakfasts. Anyway...that's that. I'm really enjoying this process. I guess I'm at stage two!!! Ciao!
