I thought it might be because it's high in carbohydrates. Other factors may be (and these are just uneducated guesses) that fresh ones still have that yeasty flavor to them. Maybe the yeast is a problem. Another one is that cornmeal is used on the bottom to keep the bagels from sticking to the baking pans. Still another is the coating of them with eggs whites to make them look shiny. Lastly, I believe vinegar is used at some point in the making of them. Hope that helps!
