I soaked some raw tuna in lemon juice for 2 days, chopped it up REAL small, and threw it in a green salad. It's day 4, and I think I even like it! My question is, soaking in the lemon juice, for how long does it stay good? Is it being preserved a bit, or is there a date past which it stops being nutritious? Thanks. So...if we're not supposed to freeze it, and we're not supposed to soak it in lemon...what are we supposed to do with raw fish? Just eat it? Straight up? What do you RAFers do?
