Thought it might be of some interest to some on this list. -B According to other sources, raw honey is considered to be a simple carbohydrate. According to Aajonus Vonderplanitz, author of the primal diet, it is considered to be about 10% carbohydrates, and 90% protein enzymes. In my consultation with him, I was told that I am a borderline diabetic. All but one serving of fruit per day was removed from my diet, but I was free to eat raw honey, though advised to do with with fats, since it gives me headaches when eaten alone. I was told this is because it detoxifies my brain of old, toxic sugar end-products stored there. Aajonus believes that raw honey is actually very good for diabetics because it helps to balance out insulin levels.
