wine and cognac in NT recipes

Wine and cognac are generally for flavoring. Substitutions? They're

probably not strictly necessary other than maybe needing to add a bit more

liquid in some recipes. The flavor won't be the same without them, but I

don't think it would be the same with any substitutes either. Maybe try

using some fruit juices, " sweet " spices and/or " sweet " herbs. Think in

terms of the idyllic things that are mentioned in the tasting notes for

various wines. For reds: berry, chocolate, nutmeg, cinnamon, etc. For

whites: melon, vanilla, banana, ginger, honey, apple, pear, etc.
