I think Kombucha is delicious! Reminiscent of apple cider. I like it

fermented long enough for most of the sweetness to be gone and it to have

more of the sour or vinegary tang. However, I have offered it to guests

whose responses have ranged from yum to yuck. So who's to say whether you'll

like it.

I have had a bottled variety at the last Nourishing Traditions conference,

and it was delicious and more effervescent that my usual homemade brew.

I started my homemade with a culture from G.E.M. Cultures...my first batch

grew mold on top of the liquid so I called GEM and the lady told me I

probably wasn't keeping it warm enough. She suggested starting over with the

mushroom and just a quart of tea with a tablespoon of vinegar since I didn't

have any more starter beverage. I got it going and it's been great ever

since. In the winter I set the bowl near a heating vent in and in the summer

try to find a sunny but not overly hot spot away from the A/C vent if it's

on.

www.kombucha2000.com is a poorly designed site that nonetheless has some

good info. They have a number of products for sale including the culture

(but GEM's is MUCH cheapter), prepared beverage, fermenting jars, a

fermenting panel that keeps the temperature ideal, and a book about

Kombucha.

Do you mean the flavor? I can't really speak to the nutritional " goodness " but

as for the flavor, go ahead, you'll like it. As I've said, I'm coming from the

world of diet cokes and hot dogs and it passes the test for me. Its something

like a cider. I wanted to know so I just ordered one bottle. Now I know I'll

go ahead and learn to make it.

whups, I meant naturally leavened (or whatever you call it when yeast

doesn't do it), not unleavened.

Wow, this sounds serious!! I'm sure my body is a total toxic waste dump and I

have many, many amalgams in my mouth. Should I drink this stuff at all? What

do I do? What do you replace your amalgams with?

Let me underscore that advice to go slowly with kombucha. Two

weekends ago our local health food store had a tasting/demo of a live

kombucha product that was available in the refrigerated foods

section. I had never noticed that it was ever there so I began

buying it. I loved it and drank several 16 oz. bottles! the first

few days. By Thursday I felt nauseous. By Friday I ached all over,

and by late in the day I was on my back where I remained for two more

days. No appetite, fever, aching terribly, and my internal organs

HURT! I could feel them throbbing.

I am getting my mercury amalgams out next month and am on a pre-

removal detox program but just by bad luck had just stopped taking

the drainage rememdies temporarily about the time I started drinking

the kombucha. When I realized what was going on Sunday I started

taking the remedies and within 3 hours I felt much better.

I don't recall reading or otherwise being warned that kombucha was

such a strong detoxifier. I figured it was like the other fermented

drinks I had made - the beet kvass, the ginger ale, etc. Nope.

Treat it with lots of respect, especially if you still have your

amalgams in or have a toxic body.

What would be a good amount of kombucha for me given my situation?

Janet? Others? It would prob. be good to take as part of my post-

amalgam removal detox program.

I hope I haven't really damaged my body with my overindulgence, but

hopefully my story can help others avoid this experience.

I always have a gallon fermenting, and it takes about 10 days, during which

time I drink up the previous gallon. So I drink about a gallon over ten

days, which is about 12 oz per day (roughly what they recommended on the

bottles)...but I rarely drink it with such regularity. Sometimes I'll go

several days without drinking any, some days I'll have a juice glass full,

and other days I might drink a quart. I have never experienced any of the

detox symptoms others have mentioned, though I have not drunk a lot over a

long period. And I have a mouth full of amalgam.

I used to use 2 cups of sugar per 3 liters, and it was more bubbly. The NT

recipe calls for 1 cup.

It's not developing the bubbles, and it is remaining sweet even while becoming

tart, as has

said, although I let more time pass than I used to.

I followed this link in another post: http://www.kombu.de/anleit-e.htm and

read their instructions for brewing...Sounds like I need to bottle my

Kombucha in tightly stoppered bottles to get the effervescence...will try

with my next batch.
