Wiley pg. 173 An important term to understand is glycemic index, which is a measure of how the body digests carbohydrates and how fast digested sugar gets into the body and is met by insulin.The glycemic index of any food can be altered by combining it with fats. Remember , the higher the glycemic index , the faster the sugar enters your system and the faster the insulin response. Conversely, the lower the glycemic index, the lower and slower the insulin response. Green vegetables also slow down the transit time through the digestive tract and will thus lower the glycemic index. This works with proteins and non starchy vegetables, too. You can change the glycemic index of any food by adding fat to any carbohydrate. Add butter or sour cream to a baked potato and you even slow down the enzyme action in the mouth. Grease your enzymes prophylactically. Think of fat as a condom for your carbs.
