For an animal to be truly healthy, IMO, and to provide healthy food (milk, meat) they need to be treated humanely, and live at least a little more closely to what nature designed. Heads locked guillotine-style in a small dark space for extended periods, is not a situation that could produce anything healthy, IMHO.
