My family *loves* coconut oil melted and poured over popcorn! We use

about the same amount as we would if we were using butter. (Of course,

you shouldn't use popcorn too much since it hasn't been soaked, etc. But

I know Sally mentions it being an o.k. snack in NT.) The coconut oil

gives the popcorn somehow a " light " taste--only way I can think of to

describe it.

Also, I use it sometimes in baking. I usually use palm oil shortening

from Spectrum Naturals in my biscuits, but sometimes I mix some coconut

oil with it. My sister has been using just coconut oil in her biscuits.

Do coconut/palm oils retain their nutrients during baking better than

butter does, or about the same?
