Guest guest Posted March 6, 2002 Report Share Posted March 6, 2002 Be sure to use new, red clay pots without glaze. Wash the pots in hot soapy water and rinse very well. Let them dry. Really slather on some cooking oil. I actually use corn oil from the grocery store for this, because if you do many pots it can use a considerable amount of oil. I also imagine that since the oil sort of hardens and becomes part of the pot it may not actually put the oil into your food. Of course leave this to your own discretion. After slathering with oil, put the pots in your oven on 250 F for an hour or so. Shut the oven off and let the pots cool. That's it. When you bake with them oil generously before putting the bread in. After baking let your bread or whatever cool a few minutes and it should pop right out. Wash with just hot water and a scratchproof pad or cloth. The more you use them, the better they get. This is some of my favorite cookware. I like the rustic look. I found some saucers that are quite deep and they made fantastic deep dish pie plates. Also, I like to use them for rolls. They are great for anything I've tried so far.
