Guest guest
----- Original Message ----- From: " Carolyn Gutman-Dey " <cgd@...> > *** I am sure this has been discussed before, but I am new to all this: is it okay to eat the egg whites raw? I have heard conflicting opinion on this. Some seem to say just eat the yolks... but is it okay when they are both together? Is this the key? Do I have this right? In other words, no raw egg whites without the raw egg yolks along with them? Thanks... Raw egg whites contain avidin, a protein which binds to biotin and makes it unavailable, but egg yolks are rich in biotin. I've heard conflicting views about whether or not the biotin in the yolk is sufficient to neutralize the avidin, but there does seem to be a general consensus that eating large quantities of raw egg whites without the yolks will caues biotin deficiency unless you're getting a great deal of biotin from some other source.
