Soft white wheat is, well, softer. It has less gluten, so it won't stick together as well, more suitable for cakes, pastries, etc. It also has a softer bran. You should experiment with the two kinds and see what works best for certain recipes. I use soft wheat (sprouted and then dried and ground into flour) for some things that would normally be made with bread (hard) flour, like biscuits, and sometimes I use hard wheat for cake-like things (soaking the flour overnight ala NT, but not necessarily NT recipes). With her help, I made my first passable loaf today -- try number six -- but still have many questions...like what's the difference between a " chef " and a " sponge " , and what's the difference between hard and soft wheat. So, rather than bore the philosophers in the group, I wonder if there is someone out there that would be willing to answer a bunch of dumb questions, as they come up. " Hard " and " soft " apply only to wheat, and the package (in flour) or bin label (bulk grain) will generally tell you what you're getting. If you're asking about relative gluten content of different grains, that's a different question. But wheat does contain more gluten than other grains. (Rice IIRC contains none.)
