If you leave it at room temp for a while, it will re-liquify. Some people

put in warm water to accelerate melting. The easiest thing to do is to pour

into a wide mouthed quart jar (like a canning jar) before you refrigerate

it, and then you can just scoop out what you need straight from the jar out

of the refrigerator.
