As an aside: I tried the raw, unheated honey. Yum, yum, yum- insulin up, up, up. I was mixing it with coconut and almond butter, so there was fat, to no avail. Of course too much of anything is no good (save milk, I take it!), but the nature of insulin resistance is that the more you have, the more you want, so with the first teaspoon I was doomed to a rollercoaster of a day. Fruit is not my friend either, unless it's a very, very good day. To make matters worse, I'm the most high-stress law student on earth having a pretty rough semester, and that of course leads to lots of stress eating. [That's why when I'm happy, stress-free even sugary desserts don't faze me, but for some reason, my insulin reactions are much more severe when I'm stressed and even an apple will set me into craving hell.] I have been a guinea pig the past few weeks within the confines of my available options. I have a quart of coconut oil sitting on my shelf. I have kefir, organic yogurt, and raw cheese from the local health food store (each time I go, it takes about 2 hours since it's about a mile away). I have lots o' (healthy) eggs. I have more frozen veggies than you can imagine (spinach, green beans, I love peas even though they are so high-sugar), along with some fresh organic veggies and fruit. My meat has run out and I have not bought more because I have no local source for anything hormone/antibiotic free. Recently, I (poor as I am, or more honestly, mired in student loans as I am) invested in: a dehydrator, a crock pot, and many mason jars. Anyway, I'm pretty unhappy lately and am desperate to try to find some available healthy things that will keep me healthy, full, and off the sugar roller coaster. I tried a very lowcarb diet (50 grams a day) and then got really sick of it. I gave up sugar for 7 weeks, which was great, and I intend to go back to that. I am not a fan of any starches, but sugar (in any form) is my arch-nemesis! So far (in several months), I have found two (only two) successes that keep me full for longer than 2 or 3 hours: 1- big glass kefir, several tablespoons ground flax, several ounces (unsweetened unpreserved) dehydrated coconut, with a pinch of cinnamon and stevia. [i do this for breakfast, put it all in a sealed cup, take it to class, then shake it up!] 2- Couple tablespoons coconut oil, a couple of cups of frozen veggies heated in that (spinach, green beans, peas), with cheese melted on top. As far as I can tell, it is the coconut in both that is holding me over and keeping things stable. Beyond that, I am either hungry or overeating (and yes, the stress is an issue). At this point, I'm so frustrated that breatharianism sounds like the way to go (hahahaha!). I am seeing a wonderful herbalist who I went to in college (she speaks to my by phone, she knows me to a tee), and she has me on a mix that includes: siberian ginseng, vitex, melissa, kava, digestive bitters, and a few other things, and I take a nice little bunch of vitamins, etc. (including chromium, alpha lipoic acid, calcium/magnesium, b complex, multi-vitamins, fish oil, and a pro-biotic). She's trying to make the stress go away since she sees that as the source of my problems. But of course stressful life= stress, so as much as I have chosen this path, I have chosen stress! So I am very willing to get stuff via mail order now, and I am also willing to make things (made some sauerkraut, NT recipe for preserving lemons now). I would love recommendations on what I should buy and what I should make staple foods.
