2 pounds extra lean ground beef -- 94%-96% lean1 quart tomato juice29 ounces tomato puree15 ounces canned red kidney beans -- drained1 1/2 cups chopped onion1/2 cup diced celery1/4 cup diced green bell pepper1/4 cup chili powder1 teaspoon cumin1 1/2 teaspoons garlic powder1 teaspoon salt1/2 teaspoon black pepper1/2 teaspoon oregano1/2 teaspoon sugar1/8 teaspoon cayenne pepper

In a frying pan, brown the ground beef; rinse well. (or you can boil the hamburger... 's does boil hamburger not used the previous day for their chili every morning) Put the drained beef and the remaining ingredients into a 6-quart pot. Cover the pot; let it simmer for 1 to 1 1/2 hours, stirring every 15 minutes.

Per Serving: 219 Calories; 5g Fat; 5g Protein; 24g Carbohydrate; 6g Dietary Fiber; 49mg Cholesterol; 1119mg Sodium. Exchanges: 1 Grain(Starch); 5 Lean Meat; 2 1/2 Vegetable; 3 1/2 Fat; 0 Other Carbohydrates.
