Ever hear of hard salami?

It's let hang at room temperature for months. It gets dryer and tougher to

chew and eat. Even though it's sealed in plastic same as other store bought

salami. (Or so I think)

Some delicatessens let them hang as a display of sorts.

Must be some fermentation going on in hard salamis

I don't think it is helpful to lump the whole gut together when discussing

what pH it should be. For example, the stomach MUST be acidic, and

the bile acids from the gall bladder have to do their work. Many acidic

foods provide minerals/ash which when recovered in the intestines, provide

alkaline substances for the body.

About the mention of lactic acid...

I have read that the layer of cells lining the intestine can get up to

70% of their caloric needs from lactic acid and acetic acid.

I think that statement is helpful, Dirk. Too many people avoid eating acid

foods when instead it is the acid " forming " foods giving them trouble.

Acid foods vs. " acid forming foods " . There are acid foods which give

an alkaline response after complete digestion and mineral/ash

recovery has taken place in the large intestine. Just my opinion.

Yup like lemon juice for example...that is an " alkaline forming " food..I

believe it's due to the bioavailable calcium present in lemons..

I think that Kombucha is also said to be alkalizing to the body..maybe from

the dissolved minerals that were present in the tea..not sure..
