I was just using that as an example of the possible benefit of the phytate presence in grains. Then trying to balance that with the mineral absorption aspect - wondering how much inhibition of absorption actually occurs and if a healthy, balanced diet is enough to provide the minerals we need without treating every single grain product to reduce phytates? Also, do normal leavening agents like Baker's yeast reduce phytates? I think I read that they do in one place. Any what about stomach acid and digestive enzymes - any positive effects on reducing phytates? I really don't know the answer to any of the above. They are just questions my brain generated in my preliminary readings on the subject.
