But I've had this fascination with vegan websites and message boards lately, and reading them has made me wonder: how well could you adhere to the principles of WAP without animal products? 1. Healthy fats. Coconut and other tropical oils would be the big winner here, the only vegetable fats that are highly saturated. 2. Fat soluble vitamins. This is tough. Clearly lots of veggies with lots of fat are needed - things like carrots sauted in olive oil and salads that don't skimp on the dressing. There is no way to get an adequete amount of D, so regular noontime sunbathing is a must and I'd need a UV-B sunlamp for the winter. 3. Nut milks, properly fermented of course. I think I'd become the nut milk expert. Pecan nutmilk actually sounds tasty - it makes me think of pecan pie! These would be a fairly good source of both protein and fat. The big thing I've been avoiding is what to make my entrees. I hate grains unless they've been baked into bread. Refried beans are good, but that would get old.
