If I do want to cook up the whole chicken in a stew form, I will do it, but not nearly as long as I do when it is just bones/skin etc. When I am using a carcass I will let it simmer overnight and the next day. When I will be using the meat in the stock I simmer on low in my crockpot for the day. And, by the way, I DO snatch bones off people's plates (Adelle taught me to do that).....They will be simmering for so long with all those onions etc...no germs could survive that could they?
