Molybdenum: deficiency, sources, heating food

I thought this might interest somebody.

" Molybdenum assists in the breaking down of sulfite toxin buildups in

the body, and may prevent cavities. With these qualities, there might

be evidence of antioxidant properties in this nutrient. It assists

the body by fighting the nitrosamines, which are associated with

cancer, and may help to prevent anemia. It is needed for normal cell

function and nitrogen metabolism. "

" High rates of esophageal cancer has been reported in regions where

the soil levels of molybdenum is low as well as vitamin c intake... "

Sources: " Milk, lima beans, spinach, liver, grain, peas and other

dark green leafy vegetables. "

" Heat and moisture change supplemental molybdenum. " I assume the

change is detrimental, but I really don't know.

" Molybdenum is concentrated in tooth enamel and inhibits dental

caries.

There is a lower rate of tooth decay in areas where molybdenum intake

is high. Navy recruits in Ohio were found to be free of tooth decay.

The reason was traced to the high level of molybdenum in their meals.

Liver is not listed, and milk (pasteurized?) isn't very high on this

mineral. From this table it appears wise to add some plants, such as

lima beans, to diet.

It is interesting that many information sources omit the one food that has

the highest concentrations of Molybdenum: shellfish.
