coconut oil/oil rancidity

Sally mentions finding this in a " Caribbean " market or some such. I found an

international market in the nearest city and they did have coconut oil in a jar

on the shelf for a pretty good price. I bought it, opened it and there was no

" pop " when I unscrewed the lid (to indicate air-tight seal). I smelled and

tasted it and it seemed ok....not as coconut-y as some that was sent to me as a

sample from ???????I can't remember what the company is now, but it was extra

virgin. I just wonder about this stuff I bought. Can coconut oil be rancid and

still smell ok?

ALSO: how does one know when any oil is rancid? The wheat germ oil we use (NOW

brand) tastes kind of good, but leaves a momentary and slight burning in the

back of my throat. The Spectrum flax oil does the same.
