nope, no mixing, I feel like such a rebel!! I have been searching for a way

to simplify things and this seems to have helped.

We have enjoyed trying different pancake recipes and experimenting. It is

nice to have different types of pancakes. I am continually modifying things.

So many recipes call for oil or margarine and salt but I did not use any.

Here is what we used so far:

2 cups sorghum flour

3 teaspoons baking powder

2 tablespoons sugar

1 to 2 teaspoons cinnamon (depends on how much you like)

3 eggs

1 1/2 cups milk sub (I used reg. Pacific rice)

I make more of a pourable batter, I used a whisk to stir it up, I find it

mixes much better then trying a spoon. They were a pretty color once I got

the timing on cooking them. I would really like to experiment with adding

apples, the flour from http://www.twinvalleymills.com is shipped with

recipes and one pancake recipe has an idea for apples
