What exactly are they and can I create my own? It seems like people are always buying and sharing them but they must be able to be created from scratch somehow...right? I'm getting this idea that one batch of kefir grains was created or developed after a big bang and all other kefir grains now come from that original source. Can't be! There's no known way to create grains from scratch. However, as you make kefir, your grains grow and propagate, and then you can give the extras to other people if you choose. Nobody knows how the first grains formed, though, which is why they haven't managed to duplicate the process yet. " Grains " is kind of a misleading term, anyway. I have some I got last Friday, but haven't had any milk to put them in until today. Should I just discard them, or are they saveable? I got some dried ones and they didn't work as well as the live ones. You are supposed to grow the dry ones in batches of milk, 24 hours each (straining between), and toss the first 3 batches.
