fil mjolk & viili

I just received a catalog from GEM Cultures. I was

wondering if someone could give their opinion of the

difference between the fil mjolk & viili cultures

(taste, uses, etc). I'm trying to choose. Also, can

you use fresh unpasturized milk to make them?

Also, I wanted to say thanks for all the great answers

to previous questions I've posted.
