Guest guest Posted February 20, 2000 Report Share Posted February 20, 2000 Tofu recipes from The Book of Tofu (Shurtleff & Aoyagi; 1998; Ten Speed Press) Tofu Fruit Whips (good for a meal or snack) 1/2 pound fresh or frozen berries or peaches 12 ounces of tofu, chilled 2 TBS honey or sweetener of your choice Chopped nutmeats or sunflower seeds, optional Combine all ingredients in a blender and puree until smooth. Serve immediately in small dessert dishes or use a topping for pancakes, crepes or waffles. Top with nutmeats/sunflower seeds, if desired. ((I make this for a single helping at a time.) ****************** Banana-Lemon Whip 2 small bananas 6 ounces tofu Juice of 1/2 lemon (try the equivalent frozen or bottled lemon juice) 1 to 2 TBS of sweetener (not always necessary) Dash of nutmeg, optional. ******************* Coconut-Raisin Whip 1/2 cup shredded coconut (try for freshest possible) 1/4 cup raisins 12 ounces tofu 3 TBS marmalade of your choice. ******************* Pineapple Tofu Smoothie 1 1/2 cup pineapple chunks, drained - unsweetened 12 ounces tofu 1 - 2 TBS honey, optional Blend until smooth. This is also good when you cut up a banana to add, or throw in 5 - 7 frozen strawberries! ******************** Tangerines/Oranges Tofu Whip 12 ounces tofu 1 cup unsweetened orange juice 1 TBS honey 1 cup tangerines (how about mandarin oranges?) Blend the first THREE ingredients in the blender until smooth; fold in the tangerine slices or mandarin orange slices. Chill for several hours. ******************** Fruit Cocktail Smoothie 1 - 2 cups of frozen tropical fruit (Schwans is good) 6 - 8 ounces of tofu Blend until smooth.
