Guest guest
I have a son who is allergic to milk-- for mashed potatoes we do one of two things: if we're making them from scratch, we just pull out a serving of potatoes for him before adding the milk for the rest of the family. If we're using something like Potato Bud (from Betty Crocker) or Hungry Jack (from. . .??? ;-)) all I do is just use plain water in place of the milk, then add extra margarine. I did this the other night w/ some Potato Buds, and my little allergic guy just gobbled them up. So did my other kids who are not milk allergic. (I'm starting one of them on the gfcf diet.) For meatballs-- my dh has celiac. You can use gfcf bread crumbs; rice; or--- Potato Buds (although IMO the Potato Buds give the meatballs a Shepherd's Pie sort of flavor-- and I really hate Shepherd's Pie-- but the rest of my family doesn't seem to mind.)
