I used to buy spelt from Bob's Red Mill and had no problems sprouting it

however it always had a lot of rocks in it so I had to hand sort it before

grinding. I recently switched to a new source. There are no rocks however

it has a lot of broken kernels in it. I haven't had much luck sprouting it.

Maybe we need to buy one source for sprouting and one for grinding! I buy

lots of kamut and it sprouts VERY EASILY! My chickens are spoiled. They get

a lot of it.

I was wondering about Bob's Red Mill products as my grocery store carries ground

spelt. But it is not refridgerated and so I thought it likely to be rancid

already. Anybody know more about this brand?

I'll try a different brand and see what happens. This

stuff came from the bulk bins, I don't know the brand.

I haven't tried that yet. Do you bake with it? How

does it behave compared to wheat?

If it's in a sealed, non-permeable bag it's probably

okay, but not great. Freshly ground is really better,

but if that's not an option, buying sealed bags of

flour is superior to buying from a bin.

Before I purchased a grain grinder I was buying flour directly from Bob's Red

Mill as I figured it was probably about as fresh as I was going to get. I

thought it tasted fine. Then I purchased a grain mill. Was I ever surprised

at what a difference there was! There's no comparison between fresh ground

and storebought flour, even if it is from a local, fairly fresh source.
