I haven't found the baking process to make oils go rancid, it's the sitting

around at room temp that does it. But baked bread either gets eaten or goes

moldy, so I don't think it has time to go rancid! Cookies sure do get

rancid though, if they sit around too long.

Never tried it. I think that whole thing is a waste of time and I

can't imagine how they could taste any better. If there was a sprout

taste panel of the general public, I bet young sunflower sprouts

would win hands down over anything, although I give the nod to

almonds.

Slow-dried salt-soaked cashews, almonds and brazils are the most delicious

things. Superlish, as my friend (annoyingly) says. The process even makes

walnuts, which everyone knows are otherwise foul, pleasant*. It may be a

waste of time nutritionally, but it's a taste transformation. I therefore

hope you're not missing out on this, and are only referring to sprouts in

your comment above.
