Guest guest
My mom used to make buttercream frosting without any shortening. She used a stick of butter, an egg, a tsp of flavoring (like vanilla extract), an egg (this was before raw eggs were decreed a health hazard), a pinch of salt, and a box of powdered sugar--what is that, a pound? She would cream the butter and salt in her old Kitchenaid, then dump in everything else and beat it. The mix would be lumpy. Then she would add cream, a tablespoon at a time, while beating, until it reached the consistency she wanted--soft enough to spread, but stiff enough not to melt off a cake. She added cocoa powder, I don't remember how much, if she wanted chocolate frosting, and about 1/4 tsp of almond extract in addition to the vanilla. Boy, that was good stuff. She often made it in big batches and froze it--but I caught her sneaking a spoonful out of the freezer container, once! I wouldn't dare keep the stuff in my freezer--I would probably sneak spoonfuls a lot more than she did. ~~Jean
