Shaw's book says that Alkaseltzer Gold can lessen the yeast die-off

effect. I think it is a bicarbonate which neutralises the excess acids.

Only use Alkaseltzer Gold - not other types of alkaseltzer.

We didn't use it. Perhaps someone else who used it can comment on how

effective it was.
