You guys only sort-of answered the original question. You said why eating

liver is important, but not why eating *raw* liver is important. I don't

know either...which is one reason why I haven't done it yet...aside from it

being the least appetizing notion I've ever conceived of. ;-)

I know it would destroy some of the b vitamins, most of the vitamin c, and

some of the fat soluble vitamins. It might also damage some of the EFAs.

This is true of any animal product though. What I'm not sure about is

whether there is any special reason to eat specifically liver in a raw

state...other than just an attempt to eat more animal foods in general in a

raw state?

Anyone know for sure?

***I do not know, I've been going on the assumption it's for the same reason

you stated above, which is the same reason that other animal flesh should be

eaten raw. Maybe someone else knows of a reason specific to liver...
