***No matter what we decide I am NOT giving up my salads, dammit! LOL

I think, if you chew well, you will probably get *some* nutrients from them,

Dennis. And yes, there is cellulose in the leaves as well as stems.

I checked out what NT has to say. In regards to cooked vs. raw veggies,

Sally writes:

" But to man, raw vegetables are also of great value, mainly for bulk and

roughage as well as to keep the intestinal content from becoming too dry.

The human intestinal tract is so constructed that roughage is needed for

rapid elimination of waste products and, equally important, for keeping the

muscles strong. " p. 178

See? You and I probably have strong *muscular* intestines...wanna go kick

sand in the face of a non-roughage eater? ;)

Cellulose is what comprises the cell membrane of virtually all plant cells.

I think the tissues of mature plants become more woody as the ratio of

cellulose to intra-cellular fluid increases (i.e. the tissues dry out).

We can digest salads, we just can't digest them quite as well as we can

digest cooked greens. I think eating some of both is a good idea. Variety,

it's not just for the spice of life anymore...
