The Vitamin A article states that vitamin A is actually a collection of differant isomers and ester forms, whereas synthetic vitamin A is just one form (usually retinyl palmitate). The point being that having just one form is responsible for the toxicity that studies have found with excessive Vitamin A intake. However, the liver converts vitamin A to retinyl palmitate for storage and that form makes up the vast majority of the vitamin A found in liver (interestingly enough, this is not true for freshwater fish, which convert it to a differant form). I brought this issue to the list when Sally was still posting here and both she and Dr. Byrnes repeated the 'Vitamin A is a collection of isomers and esters so don't worry and eat your liver' mantra. I'm not worried about Vitamin A toxicity - the levels are still quite high and liver isn't an everyday food even if you did love it. But I'm concerned that they would dismiss the toxicity studies with factually incorrect statements and blow off a legitimate criticism.
