Got me thinking though as both the pancakes and syrup turn to sugar. How do you make your quark? Lactose for some reason is an acceptable sugar for me. Probably because of the fat. Guest guest Posted April 22, 2002 Report Share Posted April 22, 2002 Tim, Years ago I determined that I had gluten intolerance and stopped eating wheat (and other gluten). I also had leaky gut and food allergies. I felt an improvement right away. But, if I slipped and ate wheat, my symptoms came back stronger than ever. Now after years of being relatively gluten free, I can eat a little wheat with no adverse consequences, but if I eat it for two or more days, I get symptoms. I work with a lot of families who have autistic kids (who are frequently gluten intolerant) and they have often said that if you go off wheat (gluten) and then have some again, the intolerance (ie symptoms) are much worse than before you went off the gluten. It's very scary and put me into depression for about a month. And caused me to end up throwing out every packaged product in the house, learn to bake gf bread, read NT, and totally change our lifestyle. But hey, you are halfway there already! You already have your lifestlye changed. On the up side, most of my nagging health problems (sinusitis, migraines, arthritis, IBS) are GONE, and you can make pancakes just fine without wheat. Basically if your gut reacts to gluten, then the villi " die " temporarily (and permanently, if you ignore the problem long enough). Then you get leaky gut and a LOT of other problems, and can't digest your food. It's associated with lots of nerve problems, including the ones you mention, plus MS, migraines, arthritis, etc. When your villi are reacting, you usually can't digest milk products either. I does not matter if the gluten is in a " natural " product or not, of if it is soaked, and for a lot of people, a very tiny amount of flour contamination can cause 2 days of misery. There IS a test for this, but it's rather inaccurate. Then we add milk to it to thin it out and eat it with maple syrup, or fruit. It use to bother me while eating wheat, now that I have quit wheat it doesn't bother me. Have you noticed that commercial flour is hard on you as well? or is it the fresh ground whole wheat that trips you off.. We don't have access around here to commercial flour but may try some to see if the effects are the same. What is the gluten test, and where can you get it, and how on earth does on survive in this world without fresh ground whole wheat organic chocolate chip cookies??? It is the only thing I miss that has chocolate in it. But yesterday I did have half of an organic chocolate bar and did not feel very good after it, but nothing like this morning. I predict it's going to be BIG deal in a year or two: better tests are coming out (like a 15 minute prick-your-finger blood test). If you have " wheat intolerance " that is gut-based, it's an auto-immune reaction that is the cause of a whole slew of related and expensive diseases, and it's usually not diagnosed for about 20 years. Anyway, I reacted last week on one tiny piece of salmon jerky (a sample) that had TVP in it (it was marked " protein " on the label, I should have known better). It's different than, say, lactose intolerance where you can drink a bit of milk and not be sick. It's an autoimmune disorder and it causes your immune system to go into kamikaze mode attacking your own gut -- incidentally releasing IgA immune factors into your blood that cause the rash for some people. You can also get an IgG reaction (I THINK it's IgG, anyway, it's the usual histamine-type allergic reaction), and a lot of people get both. If wheat gives you diarrhea type symptoms, then it's probably the gut-type reaction that leads to celiac. Over half of the people with the gut-type reaction ONLY don't ever get tested and don't think they have any symptoms (or none they can link to eating wheat), which is why developing good tests is critical. It wasn't ready obviously as all I got in the strain was a yellow blob of cheesy tasting cream and a lot of warm milk. Put it in the dehydrater with some yogurt culture in it to save it. On second thought wasn't it said here150 degrees is the breeding temp for some contaminants. Sally says chocolate craving is a magnesium deficiency and I've seen it in many other places. Had a time when I had many magnesium deficiency symptoms. Higher protein, saturated fat and especially it seems coconut milk (its my only sweet but really a fat besides lactose, some fruit too) is taking better care of the chocolate urges (was daily about 3:00 for years) than some of the supplements I've taken. I had chocolate chip cookies today. Think the body is on cycles just like nature and stress along with what you've eaten all contribute to your willpower and what your body asks for. Long week. I don't think chocolate is bad but the sugar in it is They say it takes 28 days to quit anything. A moon cycle. Thats about how long it took me to give up sugar then pasteurized/ homogenized milk in my coffee years ago. I'd go that on the wheat then work on the chocolate. Being under stress depletes your body of nutrients even faster than normal. If you are fatigued at mid afternoon, you need to focus on getting your liver function improved...Read Bieler's book (Food is Your Best Medicine) to understand how certain foods can function as stimulants, rather than building health. There is a fine line between what looks like health and what is just stimulation. Most of today's society is only able to function because of all the stimulants they ingest. Sad, but true....
